Food that I eat on a regular basis

Processed -
Salsa
low fat Plain Yogurt
low fat Cottage Cheese
Mustard
Horseradish Sauce
light mayo
Skim Milk
Tuna (canned/water packed)
Water Chestnuts (canned)
Variety of salad dressings
Mandarin Oranges (no sugar added - canned in pear juice)
Light (low fat/salt) Turkey (deli)
added summer of 2009 - every once in a while I will eat a soft taco shell as a wrap or a bagel or bread made into a sandwich - but not very often

Proteins -
chicken (baked)
eggs (rarely)
egg whites (every day)

Starches or grains
beans/legumes
(dry beans that have been cooked - never canned)
Acorn, butternut, spaghetti winter squash
Green peas
Yams and sweet potatoes
long grain brown rice

One of the first grade teachers told me -if it has seeds it is actually a fruit not a vegetable -so here are some that I am not sure WHAT they are:
Cucumbers
Peppers
Tomatoes
Zucchini or summer squash
Snowpeas
should green beans be listed down here too???

Berries (raspberries, blueberries, blackberries, strawberries)
Cantaloupe / honeydew

I stir fry, steam and bake veggies that must be cooked. I eat most veggies raw. I eat a huge salad nearly every day for lunch or dinner. I use both fruit and veggies in almost all my salads. I have fresh fruit and veggies in the house year round. I buy large quantities of flash frozen fruit and veggies year round also. I find that I EAT things like green beans and asparagus much more often if they are cleaned and ready to cook in the freezer and I can just measure out a cup.
